I can’t believe it but this year has flown by and Thanksgiving is less than a week away!
I’ve decided to share some of my favorite Thanksgiving sides and sweets along with what I’m thankful for!
Feel free to add your own special twist on the recipes below:
SWEETS
INGREDIENTS:
- 2 1/2 cups old fashioned rolled oats measure before processing in food processor (200g)
- 1 cup butter softened to room temperature (216g)
- 1 cup light brown sugar tightly packed (200g)
- 1/4 cup sugar (50g)
- 2 large eggs
- 1 1/2 teaspoon vanilla extract
- 1 3/4 cup all-purpose flour (218g)
- 1 teaspoon cornstarch cornflour in UK
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 1/4 cup premium white chocolate chips (212g)
- 1 1/4 cup dried cranberries or Craisins (200g)
INGREDIENTS:
- 6 large eggs
- 2 large egg yolks
- 3/4 cup maple syrup (I prefer Grade B)
- 4 cups coconut milk or whole milk (if you can tolerate dairy)
- 1/2 cup brandy (optional)
- 1 tablespoon vanilla extract
- 1/2 cup coconut milk, whipped into soft peaks, optional (if using coconut milk, use this method to whip ) (or heavy cream whipped into peaks if you can tolerate dairy)
- 1/4 teaspoon grated nutmeg
INGREDIENTS:
- 3 cups old-fashioned oats*
- 1 tablespoon pumpkin pie spice, homemade or store-bought
- 1 1/2 teaspoons baking soda
- 3/4 teaspoon fine sea salt
- 2 eggs
- 1 cup unsweetened almond milk, plain or vanilla
- 1 cup pumpkin puree
- 1/2 cup maple syrup
- 3 tablespoons melted coconut oil (or any mild-flavored oil)
- 1 teaspoon vanilla extract
- optional: turbinado sugar for sprinkling
INGREDIENTS:
FOR CAKE
- 2 cups granulated sugar
- 1 cup oil
- 4 eggs
- 2 cups flour
- 2 teaspoons cinnamon
- 2 teaspoons baking soda
- 1/2 teaspoon all spice
- 1/2 teaspoon salt
- 1/4 teaspoon baking powder
- 2 cups carrots, finely grated
For the Frosting:
- 1 (8 ounce) package cream cheese, softened
- 1/2 cup butter, softened
- 2 1/2 – 3 cups powdered sugar
- 2 teaspoons vanilla
INGREDIENTS:
- 3 cups uncooked elbow macaroni
- 6 tbsp salted butter
- 3 tbsp all purpose flour
- 3 1/2 cups half & half
- 2 tsp seasoning salt
- 1 tsp ground black pepper
- 16 oz sharp cheddar cheese shredded
- 8 oz mozzarella cheese shredded
- 1/2 cup Italian panko bread crumbs
INGREDIENTS:
- 12 oz. rotini pasta
- 1 English cucumber
- 1/4 red bell pepper chopped
- 1/2 cup chopped red onion
- 1 cup cherry tomatoes
- 1 cup olives
- 1/2 cup grated Parmesan cheese
- 1/2 cup fresh mozzarella cheese torn into pieces
- 1/2 cup pepperoni slices
- 1/2 cup my Italian Salad Dressing
INGREDIENTS:
MEATBALLS:
- 1 ¾ – 2 pounds ground chicken (or turkey)
- 4 teaspoons minced garlic
- 1 ½ teaspoon salt
- 1 teaspoon pepper
- 2 large eggs
- 1 cup Panko breadcrumbs*
- ½ teaspoon paprika
- 1 teaspoon onion powder
FIRECRACKER SAUCE:
- ½ cup hot sauce (I recommend Franks)
- 1 cup light brown sugar
- 2 tablespoons apple cider vinegar
- ¼ teaspoon salt
- ¼-½ teaspoon red pepper flakes (depending on spice preference)
INGREDIENTS:
- 1 cup forbidden rice
- 1 3/4 cups water
- 1″ chunk of ginger, peeled & grated
- 8 ounces butternut squash
- 1 tablespoon olive oil
- 2 tablespoons sesame oil
- 2 teaspoons rice wine vinegar
- 1 cup cooked, shelled edamame
- 3 tablespoons sesame seeds, toasted
- sea salt, as needed
- ground white pepper, as needed
INGREDIENTS:
- 3 pounds (1.5 kg) baby red potatoes, washed and quartered
- 1/4 cup (60ml) olive oil
- 6 large cloves of garlic finely chopped or minced
- Salt and fresh cracked black pepper
- 1 tablespoon Italian seasoning
- 3/4 cup fresh grated Parmesan cheese
- 1/2 cup unsalted butter
- Fresh chopped parsley, for garnish
- 1/2 cup crispy bacon bits (optional)

As I reflect going into this Thanksgiving season, I am most thankful for:
